I made this last week, along with some homemade guacamole, and the first thing Paul said when tasted it was, “Oh wow! This is good!” This will probably go into our rotation of meals.
8 slices bacon, cooked
1 large onion, sliced
2 tbsp butter
1/4 c. whole grain mustard (I used Dijon since that’s what I had on hand)
Sliced Italian bread
3/4 lb deli roast beef, sliced thinly
6 slices provolone cheese
olive oil cooking spray, or butter if you plan to just grill it on the stove
- Cook bacon until crisp.
- In medium skillet, melt butter over medium heat. Add onion, cook for 10-12 mins, until tender. Increase heat to medium-high; cook, stirring constantly, until onion is caramel in color.
- Spread mustard over cut sides of bread. Layer bottom half with roast beef, bacon, onion and cheese. Cover with top half.
- Spray outside of bread with olive oil cooking spray (or spread butter on it); grill sandwich on panini press or in a skillet, until cheese melts.
