This is a recipe that my sister shared with me. She said that both she & Theoden thought it was “to die for” and my thinking was that if Theoden liked it that much, then it must be good because he’s really picky. We had our friends Jodi & Curtis here for dinner tonight and I decided it was the perfect time to try this one. It was truly delicious, and filling! We all really enjoyed it so I have to post it for you to try as well.
1/4 c. butter
1/2 c. green pepper, chopped
1/2 c. onion, chopped
1 c. carrots, sliced into medallions
1 c. each of potato, celery, cauliflower, and broccoli
3 c. chicken broth
2 c. diced ham
1 t. salt
1/4 t. pepper
1/2 c. flour
2 c. milk
1 tbsp parsley
3 c. shredded cheddar cheese
- In large pot, melt butter and then saute green pepper, onion & carrots.
- Once onions are translucent, add the potatoes, celery, cauliflower, broccoli, chicken broth, ham, salt and pepper. Bring to a boil, then reduce heat and cover. Simmer 20 minutes.
- Meanwhile, mix together flour and milk. After 20 minutes of simmer is past, add flour mixture, bring to a boil and cook 2 minutes.
- Just before serving, add parsley & shredded cheese.
NOTE: I doubled this recipe on my sister’s advice and I didn’t need to, it fed 4 of us very well and I have about 6-7 servings left over.
