This is truly scrumptious, and is another one of our new favorites. I’ve already got a few instances where I will be making this for other people in the near future. It has maybe 5 minutes of prep work which makes it perfect for really busy or stressful days!
18 oz frozen Italian-style meatballs
12 oz frozen mixed vegetables
1 carton beef broth
14.5 oz Italian style diced tomatoes
1/2 c. uncooked Ditalini pasta
1 c. water
- Combine all ingredients in a large soup pot; bring to a boil.
- Reduce heat; simmer 8-10 minutes or until pasta is tender.
We served this with biscuits, since it’s kind of like a one-pot meal with veggies and meat. This is one of the few soups that Claire actually ate. We also have a lot of leftovers so I don’t think I’ll need to double it unless I’m feeding 10 people or more.
