1 pkg smoked sausage (I almost always use Keilbasa sausage)
1 can red kidney beans, drained & rinsed
1 can diced tomatoes with green chilies (Rotel), undrained
2 Tbsp chili powder
2 c. Minute white rice, uncooked
8 oz shredded cheddar cheese
- Cook sausage in large skillet on medium-high heat for 5 minutes or until lightly browned, stirring occasionally.
- Add beans, tomatoes & chili powder, mix well. Stir in 2 c. water, bring to a boil.
- Stir in rice and shredded cheddar cheese, cover. Reduce heat to low, simmer 5-7 mins or until water is almost absorbed. Stir until cheese is completely melted.
