I haven’t tried this recipe but it looks delicious and takes only about 20 minutes to prepare (perfect for me!).
1 pkg “Rice Sides”, chicken flavor
1 can whole kernel corn
1 can black beans, drained & rinsed
1 can chopped green chilies, undrained
1 lb chicken breast, thinly sliced
1 c. shredded Monterey Jack cheese
- Prepare rice as directed, stir in corn, beans & chilies.
- Heat 1 tbsp. oil in skillet over medium-high heat and cook chicken 4 minutes or until thoroughly cooked, stirring frequently.
- Arrange rice mixture on serving plate, then top with chicken and cheese.
