We hosted a couple of Paul’s coworkers from Denver for dinner last night, and it was a lot of fun. I wanted something easy to throw together so I used this recipe, which I got from my friend Katie S. I also served green beans, pasta salad, and soft biscuits with it.
1 box bowtie pasta
1 packet Good Seasons Italian Dressing
1 can artichoke hearts
1 package shredded parmesan cheese
3-4 chicken breasts
- Grill or bake chicken until done, shred or cut into small pieces.
- Prepare Italian dressing as directed.
- Prepare pasta as directed.
- Toss all ingredients together and serve!
Karl and Damian both really liked this recipe, and Damian even asked for it to take with him! Through dinner we also had great conversation and got to know each other more, and then we played the “train game” (Ticket to Ride). It really was an enjoyable time and I hope to do it again!
