This recipe makes about 6 servings and we really like it. It takes about 40 minutes beginning to end so it’s not such a “quick” recipe but still very delicious!
3/4 lb chicken breasts (cut in 1″ pieces)
1 lb Kielbasa Sausage
1/4 tsp salt
1/8 tsp black pepper
1 large onion, chopped
1 c chopped red, green and/or yellow sweet pepper
1 clove garlic, minced
1 10-oz can chopped tomatoes w/ green chiles
1 c long grain rice
1/4 c snipped parsley
1/4 tsp ground red pepper
2 tbsp vegetable oil
1 stalk celery, chopped
1 14-oz can chicken broth
1-1/4 c sliced green onion tops
- Sprinkle chicken w/ salt, red pepper & black pepper. In pan, cook chicken in 1 tbsp oil over medium heat until chicken is brown. Stir frequently. Transfer chicken to bowl.
- In same pan, cook onion, peppers, celery & garlic about 5 minutes or until veggies are crisp-tender. Return chicken to pan.
- Stir in chicken broth, undrained tomatoes, rice and green onion tops. Bring to a boil, then reduce heat. Cover and simmer for 20-25 minutes or until rice is tender & liquid is absorbed. Stir in parsley.
MAKE AHEAD TIP: Chop veggies, cover and chill up to 24 hrs.
